Favorite Ingredient Friday - Stuffed Baked Potatoes
Being now in the process of rejoining normal life, I'm trying to get back to regular things. One thing I enjoy doing is cooking and trying new recipes. This is one I've been using for years, but I thought YOU might enjoy trying it.
It comes from a cookbook called Home on the Range by Marabel Morgan (author of The Total Woman). This book was given to me by a dear friend just to bless me during one of Marabel's speaking engagements at our church.
The recipe is for Stuffed Baked Potatoes. My husband LOVES this recipe. Sadly, I don't make it often enough to please him, but when I do he always mentions how yummy they are.
Stuffed Baked Potatoes
Serves 8
8 large baking potatoes
4 T. butter
2 cups grated sharp Cheddar cheese
2 egg yolks, beaten
1/2 cup sour cream
3 T. finely chopped onions
1 minced garlic clove
1 t. salt
Dash of cayenne pepper
1/4 t. white or black pepper
2 T. melted butter
1 T. chopped parsely (for garnish)
Paprika
4 slices of bacon, cooked and crumbled
- Wash potatoes; dry, rub with oil and bake at 400 degrees for one hour or until done. Saute onions and garlic in butter until tender; set aside.
- Cut 1/4 in. slice off top of potatoes and scoop out pulp, leaving shells intact and about 1/4 in. thick. Mash pulp and add onions and garlic, half the cheese, egg yolks mixed with sour cream, and seasonings. Beat well and restuff potato shells.
- Brush tops with melted butter and slide under a broiler for a moment to brown. Sprinkle with remaining cheese, bacon bits, parsley and paprika. Serve immediately.

I love stuffed potatoes!
I make something very similar. I don't put eggs in mine. I have to try that next time. One thing I do is put cream cheese AND sour cream in mine. Nothing about it is lowfat but they are so good!! Reading your recipe makes me hungry for these!!
