Menu Plan Monday
Gosh, it's a new week already! Hard to believe.
Here's what we'll be eating at our home this week:
Monday - Pasta e Fagioli soup with crusty bread and salad
Tuesday - Going to a Missions Dinner, but I'll bring a salad to share
Wednesday - Church!
Thursday - Beef Stir Fry and white rice
Friday - Small Group (I may take Apple Enchiladas - recipe below - to share)
Saturday - Turkey Chili and cornbread
Sunday - Honey Garlic Chicken with fried rice

Apple Enchiladas
1 can apple pie filling
6 8-1n. flour tortillas
Cinnamon
1/2 cup butter
1/2 cup white sugar
1/2 cup brown sugar
1/2 cup water
Place approx. 1/4 cup of the pie filling on each tortilla, sprinkle with cinnamon. Roll up, tucking ends in. Place, seam side down, in a greased baking dish.
In a small saucepan, over medium heat, bring to a boil butter, both sugars and water. Reduce heat and simmer three minutes. Pour syrup over the enchiladas and allow to rest about 20 minutes.
Bake at 350 for 20 minutes until golden brown. Serve warm topped with vanilla ice cream.

I am impressed with your 8-week menu. I have one that covers about 6 weeks right now. I have been keeping it in an Excel file so that I can easily edit out recipes that we don't like. I agree that this is helping me feel more organized. I had not thought about preparing a shopping list for each week. Thanks for the idea!
Oooo, kinda like Mexican apple crisp! I love it! I'm going to try that with those last few apples getting a little soft in my fridge!!
These enchiladas sound yummy. BTW, I also make honey garlic chicken and hubby and I both just love it. It's soooo tender and flavorful.
I did a 6 week menu plan at the beginning of February, and I LOVED how - calming, is that the right word? it was. Even my husband liked knowing what was coming, and I didn't ever know he really cared at all.
